My fruit cakes are made from quality ingredients – dried mixed vine fruit, fresh orange and lemon peel that is soaked overnight in sherry or orange juice to make the fruit plump and moist. Ground almonds, butter, dark sugar, flour, cake spices and locally sourced eggs – all make for a rich dark cake. |
